The option of a special oil for the diary consumption is of an extreme importance as the fat components will integrate the organism’s cells and will have a direct influence on its good functions.

Our appreciated Mediterranean diet, characterised by the use of vegetables, legumes, cereals, fish and olive oil has been the object of numerous studies since the 80’s.

They permit to state that the best oil for the health is the extra virgin olive oil. Its special composition distinguishes it from other vegetal oils and make that its consumption prevents some actual diseases.

It possesses a high percentage of oleic acid which makes it more resistant to the high temperatures of cooking and enough quantity of fat essential acids. (Linoleic acid and linolenic)

This is the way Nature gives us a food with an extraordinary composition, with high proved benefits for our body. It protects the gastric and duodenal mucus, prevent the formation of gallstone in the bile and collaborate to avoid osteoporosis by improving the intestinal absorption of some nutrients such as calcium.

Thanks to its elevate concentration of sitosterol, this is a beneficial factor for the function of the digestive system due to its property of keeping low the percentage of HCL in our stomach. Thus, the olive oil helps the normal function of the digestive system and protect our heart. It offers also a protector effect of the arterial hypertension and helps the creation of antithrombotics substances and vessels expanding.
